The Danish stalwarts at Coffee Collective recently made an exciting announcement on their blog. After years of only serving limited pastry offerings to maintain focus on their coffees, they will now begin offering delicate treats created specifically to pair with certain coffees on the menu at their location (and roastery) on Godthåbsvej.
The idea was to keep it as simple as possible. Three small dishes, each paired with a specific coffee as a combined experience. The dishes change along with our coffee menu, so new flavour combinations can be tested. - Coffee Collective blog
This idea comes from the company’s experience working with and learning from several high end restaurants who have begun incorporating the flavors of coffee into their tasting menus the same way they would wine and other foods. It’s an inspiring addition to an already fantastic coffee shop. I’m definitely looking forward to my next visit.

Last night, 200 of the coffee industries finest gathered together in Copenhagen, Denmark to welcome the next 3 days of inspiring speakers, cuppings, Nordic barista team competitions and enough delicious coffee to satisfy all our discerning palates.
I am on-site with my colleague Tim Styles from Workshop Coffee to capture all the action. We will be uploading videos of the speakers at the end of each day, blogging and tweeting the highlights on behalf of the Nordic Barista Cup for those who can’t be here.

While visiting Copenhagen, there are several places to have great coffee and try a delightful sampling of Scandinavia’s finest roasters. By walking (or biking) a straight line northwest from the city center, there are opportunities to taste coffee roasted by Solberg & Hansen, Koppi and the Coffee Collective—quite a Nordic trifecta.
Democratic Coffee Bar is one of those stops and has become one of my favorite places to visit while in Copenhagen. Opening last October in the city’s newly renovated Hovedbibliotek, Democratic takes the award for greatest café in a public library and are currently the only shop in Denmark using coffee from Sweden-based Koppi.
The space is separate enough from the library that it feels like its own space, but until their own door is installed, you currently enter through the library’s main door. The front wall opposite the bar, is made of floor-to-ceiling windows that flood the space with natural light and provide ample bar space for guests to watch the world pass outside.
The wood bar is elegant and sparse providing a natural bridge between the heavy black shelving at one end and the warm glow of the kitchen’s luminescent orange tile at the other. Each morning, Oliver, the shop’s owner, bakes fresh croissant’s and cookies on site that perfectly compliment the coffee (if they haven’t sold out).
If you’re not interested in sitting at a bar, you can take your coffee into the library’s lounge and sit among a diverse array of library guests enjoying free magazines and internet at designer tables flanked by Eames chairs. For the love of Scandinavia.

Three weeks ago, I shared the announcement of Coffee Collective’s new roastery and coffee bar opening this summer in Copenhagen. Since then, I’ve been down to Denmark to meet with Klaus and tour their beautiful new flagship in Frederiksberg.
The new roaster is warming up, the Über’s been installed and a lovely row of stools are lined up at the brew bar waiting for customers to wear them in. As soon as the final permits are received, this incredible new space will be open—for what I imagine will be the most unique coffee experience in the city. Stay tuned.

For months now, there have been rumors that Denmark’s darling specialty coffee roaster, Coffee Collective, was expanding—as well as their interest in a Loring Smart Roaster. Less than a year after opening a new shop at Torvhallerne, those whispers have been confirmed with more details and an exclusive first look inside the new space.
4 ½ years ago The Coffee Collective opened their microroastery and coffee shop in a small basement in the at the time dodgy street ”Jægersborggade”. Since then the collective have opened another coffee shop at the food market Torvehallerne and is supplying coffee to shops all over Denmark. Now the time has come to get more space for roasting amazing coffees and at the same time try out yet another kind of coffee shop experience.
For the past few months the collective have been renovating an old factory building in the picturesque Frederiksberg. It will house a larger roastery with a 35 kg Loring Smart Roast, a larger office space and a coffee bar unlike any other in Denmark. Here The Coffee Collective wishes to focus more on the flavours in coffee rather than brew methods, and show just how different coffees can taste.
There will be a changing menu of brewed coffees, signature drinks and even a cupping session will be on the menu. The goal is both to get more people to focus on what they can taste in coffee as well as experience some of the amazing drinks from the barista competitions.
The roastery will be visible through a large glass wall, so you can see how the green coffee is transformed into brown, roasted beans. And all along you can relax in the shop while sipping the same coffee. Transparency is key, both in the coffee shop, the roastery and the way we do business. -Coffee Collective
While an opening date hasn’t been confirmed, I’d guess if you’re coming to the Nordic Barista Cup, you’ll have a chance to visit. Congratulations to Klaus and the crew as they continue to expand. Looking forward to walking across those liquid glass floors.

There are several coffee events taking place this summer—but the NBC in August is the one I’m most excited about. Aside from the best Nordic baristas under one roof in CPH, everyone on this list above will be dropping knowledge on those in attendance. I’ve talked about my visit to The Coffee Collective’s original shop at Jægersborggade in the past, and I recently used one of their coffees to compete in the World AeroPress Championship in Milan. So it’s fair to say I’m a big fan of what they’re doing.
While I was in Copenhagen picking up my competition coffee, I also stopped by their newest location at Torvhallerne, a public market near the city center. Oliver Strand was one of the first to write about visiting the new space, and I was excited to see it myself.
This location consists of a really long bar in the back corner of a modern glass pavilion. It’s surrounded by other vendors selling chocolates, baked goods and spices that will more than inspire your appetite.
A steady line begins at one end of the bar, where orders are placed, that makes its way down the line passed the lovely (world exclusive) Spirit espresso machine. If filter coffee were ordered, you continue on to the V60 bar where there’s an unobscured view of each coffee brewed by the cup.
A large, full-color map of the world illuminates the back wall and serves as a colorful backdrop for the baristas working methodically to serve the 700 to 1000 cups that can be ordered on a given day. The map is punctuated with photos from the farms where coffees have been sourced, adding a visual sense of scale to the process.
The new shop has a completely different feel than the original, but the coffee is just as good. So depending on your mood and the kind of atmosphere you’re looking for—you now have a choice.

This week, Aaron’s post on FrshGrnd reminded me that I never wrote about my trip to Copenhagen back in September—more specifically my trip to The Coffee Collective. This coffee bar, tucked down a pleasant residential street in the Nørrebro district, was one of my favorite stops. It’s also close to the sprawling Assistens Cemetery that’s used more like a city park than a final resting place by local residents.
My favorite aspect of The Coffee Collective is the open design of their bar. There is no barrier or counter between the customer and the barista—everything, including a prototype of the sexy new La Marzocco Strada espresso machine, is displayed for all to see. There was a never-ending line that flowed out the door during my hour visit, but more than enough seating at the large wooden tables out front.
I started out with an AeroPress of Hacienda La Esmerelda, known by some as the best coffee in the world. The flavors were not as clear and pronounced as the cup I had at Tim Wendelboe, but still unmistakably sweet and fruity. I followed up with a really sweet, but extremely bright shot of espresso and ended with a deliciously tart cup of Kenya Gatina. The quality of the coffee, along with the relaxed atmosphere of the café and its neighborhood, make this a top destination for any coffee lover traveling to Copenhagen.
