While everyone was fawning over the New Year return of James Hoffmann (guilty!) another voice quietly reemerged to the internet after nearly 20 months of silence. Like a small gift left unopened behind the Christmas tree, Stephen Morrissey—2008 World Barista Champion, Director of Marketing at Intelligentsia and a founder of Coffee Common—began 2012 with an honest post about his morning coffee routine.
I spend the entire brewing cycle dwelling ( sorry ) about variables. I wonder how much coffee should I use to purge. I wonder did I store the coffee properly, will 2 days off roast have a big impact – should I let the grounds sit a little before brewing or should I brew with hotter water? I wonder should I boil the water in the kettle, and then decant into the buono, or maybe bring all the water to a boil on the hob, I wonder how much water temperature matters anyway – I’m pretty sure Jen fills a cold buono with water 10 seconds off the boil, but her brews are always solid. Shit, what does Jen do agitation wise – why didn’t I watch her stirring technique instead of adding more butter to the scrambled eggs. – Flyingthud

Since the beginning of October, Mike White (one of my favorite coffee persons) has been chronicling his daily coffee experiences on a feed simply titled “My Daily Coffee.” The photos are all simple overhead views of an empty cup, which creates a nice visual collection of vessels contrasted with a great variety of table textures.
Each photo is captioned with a brief description of the experience. The observations drift between flavor notes, environmental observations and customer service. Many of his thoughts are concise enough to be tweeted. Enjoy.
There’s a great new coffee resource to add to the continually growing list of must-read websites—Nordic Coffee Culture. Featuring an editorial team that includes some of Scandinavia’s most inspiring coffee professionals, it aims to discuss the “themes that unite the coffee cultures of Iceland, Norway, Sweden, Finland and Denmark.”
The people of the Nordic countries have a passionate, deeply rooted relationship with coffee. So deeply rooted, in fact, that it is rarely spoken about, and rarer still, given serious thought. It is accepted as a matter of course, a part of the cultural fabric, and – in a more narrow sense – a culture unto itself.
The site is supported by Wilfa, a Norwegian based housewares and lifestyle company, but aside from a small logo on the site, their presence is non-existent. It’s nice to see such a respected collection of voices talking about coffee with consumers in mind, instead of geeking out exclusively with others in the coffee industry. Congrats on the launch and I’m looking forward to a future filled with great content.
